Carbonara for dinner. Ate Neapolitan pasta for lunch. Sorry no lunch photos. I researched this Mancini pasta and It’s pasta used by half of the 3- star Michelin restaurants in Italy. You can Buy it from Eataly at Tsujido Terrace Mall. I watched many YouTube videos on how to make carbonara but none of the videos showed how I prepared it tonight. I tempered the eggs yokes the same way one makes hollandaise sauce. I don’t know the cooking term. Then slowly, I added little pasta water into egg yokes. Of course trying to avoid cooking and curdling the eggs. Peace!
