Hikari Soup and Salad

Tonight's soup I prepared a Mexican chicken soup called Caldo de pollo. This soup is really easy to make. Traditionally I believe a whole chicken is used however, I opted for regular chicken thighs. Here are some brief notes on how to prepare this soup. Stir fry some round onion, celery, garlic and bell pepper. Then add in your cut chicken thighs. Other things I added into the soup include: a can of whole tomato, tomato paste, lots of cumin, peppercorn, salt, chicken stock, a can of garbanzo beans, salt. Then side garnishes include: avocado, diced round onion, cilantro (pakuchi), and sliced lime. I fried and crisped up some tortillas in oil.


For my salad I made a creamy roasted garlic dressing. Make a foil pocket and in this pocket put in a bulb of garlic, salt and splash of oil. Close the foil pocket and bake for 30 minute or until soft. Ingredients for the creamy garlic dressing include: roasted garlic, mayonnaise, sour cream, grated parmesan, salt, sugar, and vinegar.


While cooking I prepared and enjoyed a fresh mojito (mint, Hawaiian honey, lime, rum and soda water). Shaken with ice.
